I know this might seem bizarre as a description of a plate. Is it sweet? Is it savory? How does it work? As it often happens I had some butternut squash leftovers from making soup. And instead of cutting it up and freezing it for another occasion I thought I would experiment a bit. I don’t normally prefer simple recipes. I know that for everyone who is here on this site, cooking equals fast and simple recipes. But I like to take my time in the kitchen and have fun. However, this recipe is quite easy and straightforward. And together with the spices and the honey you get a dessert that reminds you a bit of autumn, a bit of Christmas, a bit of cozy afternoons, and a nice warmth. It can be eaten on its own, or with yogurt, or with granola or even as a topping for pancakes I guess. And as I am writing this I thought of a crumble that instead of apples you could use this roasted butternut squash. This is worth trying! Will keep you posted of the outcome when I manage to test it!
INGREDIENTS
1 large Butternut Squash
2 tbsp of melted butter
2 tbsp of brown sugar
1 tbsp of honey or maple syrup
a bit of cinnamon or all- spices
a pinch of salt
ground ginger (optional)
black sultana raisins
PREPARATION
Preheat oven to 190C and place the rack on upper middle position. Cover your pan with a baking sheet.
Peel and cut the butternut squash into cubes. This is the only difficult part of this recipe.
In a bowl mix all the other ingredients. Toss the cubes in the bowl and make sure your cubes are covered thoroughly. Spread the squash cubes evenly in a single layer of yout pan. Try not to overcrowd.
Roast about 35 minutes, rotating pan midway during baking and making sure the cubes have not caramelized due to the sugar. A few minutes before they are ready add your raisins in the pan and mix with the golden cubes. When edges are browned and cubes are tender, remove from the oven.
Serve hot with whipped yogurt or with some crashed walnuts.
