This is actually one of the healthiest recipes you will find here and I did make them by accident. I was in Patmos, it was end of October, summer was over and ironically, I did find sweet potatoes in the local island super market. I recall I had in mind something different to make with them but I had some leftovers so I decided to make them baked chips/wedges. And yes…. I left the skin on. Very few ingredients, very little preparation. The only tricky part in this recipe is that the sweet potatoes might be big or thick and difficult to cut. But with a good knife, and some willingness to build some muscles everything can happen. The result is as good as if you fried them, much healthier and hustle free. In Greece we haven’t really gotten deep into the different things you can make with sweet potatoes since only recently people started buying them. I wouldn’t want to get into the nutritious values they have since I am not an expert and it is not my field, but look it up and you will be impressed, believe me.
INGREDIENTS
2-3 medium sweet potatoes
2 tbsp of olive oil
salt
freshly ground pepper
1 tbsp chilly flakes or paprika
PREPARATION
Preheat oven to 180C/160C fan
You can peel your potatoes or if you decide to leave the skin on, wash them thoroughly.Cut the potatoes into wedges and place into a roasting tin covered with parchment paper.
Drizzle the wedges with the olive oil, salt, pepper and paprika and cover them well distributing them evenly on the tin.
Roast in the oven for 20-25 minutes or until golden and the edges are brown and crispy. Serve hot with a spoon of yogurt and some chives.
